Stella Alpina (Alpine flower) is a semi soft, alpine style, mould ripened cheese. The rind is predominantly white dappled with naturally occurring ripening mouldsthat are allowed to develop by gentle brushing the cheese during it's maturation,these add to it's unique and rustic character.CHARECTERISTICS
A mild cow milk cheese with smooth earthy, mushroomy, flavours.

The texture is firm and smooth, becoming softer as it ages, with a light cream coloured paste.
